Dieting so far..

So far it has been hard, the only time I am able to go walk on the tread mill is after Cassie goes to bed at 8pm. The eating part has been kinda tough too because my husband and I don't really eat the healthiest and we cant really afford it, with me being a stay at home mom, we are barely making it. We have been better since Cassie has started eating table foods but there are some things that we could do differently. I have been under my calorie goal but its all the fatty foods that I eat that is messing me up. I went to my sister in laws house on Sunday and weighed myself then and I had lost 2.4 pounds I am super excited about that! We are going there again this weekend so we will see how much I weigh then.

Losing Weight

I am determined to get skinny again and stay there. Since I left high school I have gained a ton of weight and I want it gone! I have joined myfitnesspal.com and so far I am doing good, I've been below my calorie intake although I haven't gone to the gym like I planned I will get this weight off. Once the weather clears up I will go on walks everyday with the little lady and spend more time outside. I am going to be blogging about my weight loss journey (as well as other mommy things), I don't have a scale yet, but the last time I checked my weighed about 10 months ago I was at 197, I weigh about the same as my 6foot boyfriend, I'm 5'5 eek!

My sister-in-law, Kat, is on summer break now and we have been skyping it's nice to see my in-laws again. Yesterday I organized the apartment and got rid of a lot of boxes, most of which we're still put together and empty, so I broke them down and stored them so that we have them when we move in a year. I organized the "laundry room", we keep the extra diapers, wipes, kleenex, paper towels, sheets, blankets, towels and mine and my boyfriends clothes as well as our laundry soap and a few boxes that we get into every  now and then so that everything is more accessible to me. I also vacuumed the entire apartment and cleaned off the bar (it was a mess) hopefully I can get to everything else tomorrow. I dont think Cassie will nap today, I can maybe get the kitchen done when she is awake.

Honey Sesame Chicken

Slow Cooker Honey Sesame Chicken
Recipe adapted from: Baby Center

Ingredients:
4 boneless, skinless chicken breasts (thighs would be fine too)
Salt and pepper
1 cup honey
1/2 cup soy sauce
1/2 cup diced onion
1/4 cup ketchup
2 tablespoons vegetable oil (could also use olive oil or canola oil)
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional - doesn't really add heat, just adds more flavor)
4 teaspoons cornstarch dissolved in 6 Tablespoons water
Sesame seeds

Directions: 
Season both sides of chicken with lightly with salt and pepper, put into crock pot. In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes. Pour over chicken. Cook on low for 3-4 hours or on high 1 1/2 – 2 1/2 hours, or just until chicken is cooked through. Remove chicken from crock pot, leave sauce. Dissolve 4 teaspoons of cornstarch in 6 tablespoons of water and pour into crock pot. Stir to combine with sauce. Replace lid and cook sauce on high for ten more minutes or until slightly thickened. Cut chicken into bite size pieces, then return to pot and toss with sauce before serving. Sprinkle with sesame seeds and serve over rice or noodles.

The nutritionist said to keep doing everything that we are doing but she wants Cass to gain 2-3 more pounds by the time she is 2. If she stays the height that she is she will be in the 25% for height to weight. She weighed 20.6 lbs when we went to the nutritionist 5-23, which means she gained 1.3 lbs in a little over 2 weeks! On a side note I have friends visiting in August and I'm super excited I've been trying to find some stuff for us to do when their here.
